What You Need:
- 2 cups cooked Rice,
- 4 tbsp olive oil,
- 1/2 cup chicken cubed
- 1 small onion, diced
- Salt and pepper to taste,
- 2 cloves garlic finely chopped,
- 1/2 teaspoon sugar,
- 1-2 tbsp soy sauce and hot sauce (optional ),
- 1 egg (beaten),
- 1 tbsp vinegar,
- 1 – 2 green onions, and 1/2 cup some other vegetable like cabbage, carrots, green peas, green chili, green bell pepper (chopped) .
Here’s How:
Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the egg. Cook, stirring, until they are lightly scrambled. Remove the egg and clean out the pan. Add 2 tablespoons oil.
Add the onion and cook until starting to golden then add sugar cook until onion become golden then add the chicken ,vinegar, garlic stir for few minutes then add all vegetable except green onion stir for few minutes, then add the rice.
Stir-fry for a few minutes, Then add salt, pepper, soy sauce and hot sauce.When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.
