Coriander Lemon Chicken With Savory Rice

What You Need:

1 kg chicken fillet

½ cup coriander leaves

½ cup mint leaves

 1 tsp ground garlic

¼ cup plain yoghurt

2 tsp crushed cumin

Salt to taste

1 tsp ground pepper

3 T lemon juice

2 T oil

Savory Rice:

1 ½   cups Basmati rice

3 tsp salt

4   T ghee

I onion

2 tsp garlic

1 tsp cumin seeds

1 tsp green chilies (ground)

1 tsp lemon pepper

1 tsp salt

2 T mayonnaise

1 cup spring onion, chopped finely

¼ cup coriander leaved chopped, finely

Here’s How:

Make slashes on one side of the chicken fillet.
Liquidize mint, coriander, garlic paste, pepper and yogurt.
Add the remaining spices and marinate few hours.
Cook rice until ¾ done.
Braise onions in ghee, garlic, and cumin seeds.
Add the chopped coriander leaves and spring onion and mix into the cooked rice.
Steam on low heat for 10-15 mins.
